Chicken Curry | Recipe

Chicken Curry Recipe (My style)

Key Ingredients:

Chicken                                      500 gm
Cooking Oil                                4/5 tablespoon
Cumin Seeds (jeera)                   1 teaspoon
Bay leaf (Tej Patta)                    1-2
Suger                                          1/2 teaspoon
Salt                                              As per taste
Turmeric powder                        1/2 tablespoon
Green chilly                                 2-3
Onion (chopped)                          3-4 medium size
Tomato (chopped)                       3-4 medium size
Ginger/ Garlic paste                    2 tablespoon
Onion Paste                                 1/2 Cup

Spices:

Coriander powder (Dhaniya)      1/2 tablespoon
Cumin powder (Jeera)                1/2 tablespoon
Cinnamon (Dal Chini)                1 inch
Cloves (Lwang)                           2-3 
Green Cardamom (Sukmel)        2-3
Black pepper                               5-6
Nutmeg (Jaifal)                           1/4th 
Red chili powder                        As per taste
Kashmiri chili powder (optional) 1/2 tablespoon (for color, it is not that spicy)

Grind all the above ingredients and prepare a fine powder.
Note: You can use garam masala instead-but taste of freshly grinned Spice is really great.

Recipe:

    1. Heat Pan (karahi)  in the Gas stove. Put Oil in it.
    2. When oil hot enough then add Cumin Seed in it and let it cook until color changes to brown
    3.  Add sugar and let it melt, then add chicken and stir it so that it sticks in the base.
    4. Put turmeric powder and Salt in the chicken. Cook until its color changes to reddish-brown with continuous stirring.
    5. Now bring out the chicken from the pan without turning off flame.
    6. If oil left from frying chicken is not enough to fry other spices then add some more oil and let it heat.
    7. Put Bay leaf in oil and cook it till brown. Then add 2 chopped onion, cook until its color changes to light brown.
    8.  Take 2 onion, tomatoes, ginger-garlic in a grinder and make a fine paste. Add this paste along with garam masala into the oil and cook them until oil separates from all the masalas.
    9. Add some salt, turmeric powder, red chilly powder, and cook for 1 to 2 minutes. Then add fried chicken in it, mix everything well and close the lid for 5/ 10 min (You can add water too if you need more gravy). 
    10. Remove it from flame add coriander leaf and delicious chicken curry is ready to serve.

    SOOJI KO KACHAURI | Recipe

    SOOJI KO KACHAURI RECIPE

    Key Ingredients

    For Sooji dough:

    Sooji                                                  2 cups
    Carom/Cumin seeds                          1 teaspoon (ajwain/ jeera)
    Cooking oil                                       1.5 tablespoon
    Water                                                 3 cups
    Salt                                                    As per taste
    Chilly powder                                    1teaspoon

    For Stuffing:

    Potato                                                 2 cups (boiled and mashed)
    Green Chilly (chopped)                     2-3
    Coriander leaf (chopped)                   1/4 cup
    Red Chilly Powder                            1 teaspoon
    Garam masala                                    1/4 tablespoon
    Chat masala                                        1/4 tablespoon
    Cumin seed                                        1 teaspoon
    Chopped onion                                   1 medium
    Salt                                                     As per taste

    Recipe:

    1. Put pan on the gas stove and add water in it.
    2. Add Sooji and all the other ingredients mentioned above to prepare the dough in it. Stir until the mixture become thick  then turn off the gas
    3. Take a bowl and then add mashed potato and add all the ingredients mentioned above for stuffing in it.
    4. Put 1-2 drop of oil in hand and spread it all over the hand
    5. Take dough (small ) and press it with the hand
    6. Make some space in the dough and put stuffing in it and close it.
    7. Now heat oil in the pan and then deep fry these Tikkies until color changes to brown color on both side
    8. Remove extra oil with a paper towel. Serve delicious kachauri with chutney or tomato sauce.

                                


    Alu ko Achar (Spicy potato pickle) | Recipe

    Key ingredients 

    Potato                                     6(large)
    Sesame seed(white)               1/4 cup
    Green chilly                           As per taste
    Lemon                                   As per taste
    Salt                                        As per taste
    Turmeric powder                   1 teaspoon
    Fenugreek seed                      1 teaspoon
    Coriander Leaf                      1/4 Cup
    Cooking Oil                           4 to 5 tablespoon (as per your requirement)

    Recipe:

    1.  Boil Potato until they were cooked finely.
    2.  Left until they cool down.. then peel out their skin and cut into the size you want (make sure they maintain their shape)
    3. Heat pan and then add sesame seed in it and cook until its color changes to brown. Then grind it finely.
    4. Put salt, sesame seed powder, green chilly and mix them well
    5. Heat oil in the pan. Add fenugreek seed and cook until its color changes to black color
    6. Add Chopped chilly in it and cook for a while, finally add turmeric powder stir well and then add to the mixture.
    7. Add lemon juice to the mixture and mix all the ingredients well.
    8. Put coriander leaf on the top for garnishing.

    Delicious Alu Achar is ready to serve

                  You can serve Alu ko Achar with roti, rice, beaten rice, or whatever you like.

    Chicken Chhoila | Recipe | Rotisserie Chicken Choila

    Chicken Choila Recipe

    Chicken Chhoila Recipe

    Key Ingredients:

    Chicken –        550-650 grams (cut in small pieces) raw 
                            OR
                     One rotisserie chicken (skin and bone removed)

    Fresh ingredients:
    Onion –                         2 medium
    Green onion -               1 cup (chopped) 
    Green chilly –               as per your taste (cut in half or quarters)
    Coriander leaves         2 to 3 table spoon 
    Lemon juice                 2 to 3 table spoon
    Coriander powder -     1/2 tablespoon
    Cumin powder -          1/2 tablespoon 
    Garlic and ginger        1/2 table spoon
    Salt                              as per taste

    Tomato paste ingredients:
    Tomato –                   3 medium
    Szechwan pepper     8 to 10 peppercorns
    Dried Red chili-         2/3 (as per your taste) depends on how spicy you like your choila.

    Ingredients for tadka:
    Cooking oil                          2 to 3 table spoon
    Turmeric powder-               1/2 tea spoon
    Fenugreek seeds (Methi)   1/2 tea spoon

    Recipe:

    • Cut the chicken into 1-inch cube. You can either boil or roast it in an open fire or pan fry. But roasted chicken will give the best taste. Cooking time for chicken is 15 to 20 minutes while roasting or pan-frying and 10 to 15 min while boiling. Alternatively, you can use rotisserie chicken, remove skin and bones and then shred it into small pieces and then air-fry it for 10 mins. 
    • For boiled chicken remove all the water and let it cool for some time. Till then make other spices ready.
    • Either roast tomato in gas or boil it and peel off its skin (roasted tomato taste better than boiled one). Smash it with hand or make a paste in the grinder after cooling it.
    • Take a bowl and transfer chicken into it. Add salt, chilly flakes, tomato paste,  coriander powder, cumin powder, chopped onion, garlic/ginger paste. And mix it well and leave it for a while so that it absorbs all the spices.
    • Finally heat oil in a pan, when it is hot enough then add fenugreek seeds and cook  it until its color changes to black. Turn off the flame and add turmeric in the oil.  Pour this oil into the mixture finally add lemon juice and mix every thing well. Garnish with coriander leaf, some sliced tomatoes, and onions

    Delicious Chicken Chhoila is ready to serve.
