Cheema Noodles Recipe

Noodle is one of the popular dish around the world. We can find different variant of noodles available in market and Chowmin is most popular in Nepal.  You can find it in most of the restaurant and local canteens. Cheema (Minced meat) noodles is gaining its popularity nowadays and I also fell in love with this cuisine when I eat for the first time and continued till now so decided to share its recipe of my version.

Ingredients for Keema / Minced meat preparation:
Minced Meat                     200 gm
Oil                                      1 tbs
Salt                                     as per taste
Ginger/ garlic paste           1/2 tbs
Soy sauce                           1 tbs (light or dark/ less sodium)
Onion                                 1/2 cup (finely chopped)
Tomato                               1/2 cup (finely chopped)
Green Onion                      2 sticks



Other Ingredients:
Spaghettis / fresh noodles     200 gm
Bok Choy                              2/3 buds (baby Bok choy preferred)

Seasoning:
Soy sauce (dark/ less sodium)
Sesame oil
Chili oil   (recipe for chili oil https://ingredientsrecipe.blogspot.com/2023/01/chili-oil-recipe.html)


Recipe:
I usually prefer to do parallel preparation of noodles and C
heema (minced meat) you can prepare meat in prior and then boil noodles just when you want to eat it. 

1. For chema preparation (minced meat) you can choose meat of your choice. I tried chicken, turkey and pork separately and so far pork meat cheema was best testing for me. 
2. Heat pan and put oil in it (any vegetable oil or olive oil). Once oil is hot add chopped onion and fry till it become translucent.
3. Then add Cheema in it (minced meat) and along with it we can add seasoning like salt ginger garlic paste and soy sauce and cook until oil get separated from Cheema ( this is the point when Cheema is cooked properly) and then at last you can add tomatoes and then cook it until tomatoes get mashed in the Cheema completely. Now our Cheema is ready.

4. Take a deep container for cooking which hold at least 2 liters of water. 
5. For preparing perfect spaghetti lots of water and salt is needed and cook it for 10 to 15 mins depends on the thickness of spaghetti. 
(you can always check if spaghetti is cooked or not by taking out one spaghetti and pinching it, if white flour is seen in the middle it's not ready yet.)
6. Once Spaghetti is almost ready add Bok choy in it and cook for 1 to 2 mins.

7. We can prepare sauce while noodles are boiling and later when they are ready we can put them on top of sauce. 
8. For sauce take dark soy sauce, sesame oil and chili oil (portion mentioned in the ingredients list). 

9. Put cooked noodles on top of sauce and cooked Cheema on top of noodles and mix all of them together to enjoy delicious cheema noodles.

Main ingredients for chili oil:
Oil (I'm using extra virgin olive oil)                           500ml

Dry Ingredients:
Chili flakes (hot chili pepper)                                     1/2 cup
Non spicy chili powder for color (kasmiri mirch)       2 tbs
Roasted peanuts (ground)                                            2 tbs
Roasted sesame                                                            1tbs
Salt                                                                               2 tsp (or as per taste)


Dry Spices:
Bay leaves                 2
Star Anise                  1
Cinnamon stick         1 inch
Cloves                       3 to 4
Green Cardamom     3 to 4
Black Cardamom     1

Other Spices:
Red onion                1/2 of one medium onion
Green onion             2 strands
Garlic                       2/3 cloves
Ginger                      3/4 thin slices

Recipe for Chili oil:
Unlike long list of ingredients recipe for chili oil is really simple we only have to be careful in few things. 
First heat oil in medium flame. For chili oil we will be using neutral oil so that it will carry the aroma of all the spices we will put into it. In my case I'm using extra virgin olive oil you can use any neutral oil such as canola oil, sunflower oil etc whichever is convenient for you.

Dice very roughly red onion (around 1/2 inch cube ), cut garlic cloves into half, cut green onion in around 1 inch stripes, and slice ginger 2 to 3 thin slice and add them into hot oil. Decrease flame of stove and let them cook for 15 mins. Till this moment you can see the color of those spices will change to light brown color.

When all the above ingredients color becomes light brown you can add dry spices mentioned above and let them cook for 5 more mins.

Remove all the roasted spices from oil.

Put chili flakes and other dry ingredients into a heat protective glass jar or any heat resistant bowl and pour that hot oil into the mixture. Stir it to mix it properly and let the oil cool down.

Aromatic chili oil is ready to be served in any of your favorite food such as noodles, dumplings or fried rice.
